棄種是甚麼?
棄種(discard)是在做酸種麵包時的副產品,由於用到天然酵母,而製作之前需要恢復天然酵母(starter)的發酵能力,所以會抽起一部份天然酵母,然後加入麵粉和水令其活躍度提升,而部份抽起的天然酵母並不會再參與之後的麵包製作過程,所以稱為棄種。

棄種成份就是麵粉和水,加上不太活躍的酵母菌。製作麵包的人會想辦法利用棄種製成不同的蛋糕,餅乾,班戟和煎餅等,不會白白浪費棄種。

加了棄種的烘培產品由於有酵母的成份,所以味道更加豐富,質感更鬆軟。

如果沒有做酸種麵包的朋友可以跟據食譜加多一點麵粉和水,便可做出相同的瑪芬,在食譜中已經計算好需要的份量。

這個食譜連打蛋器也不用,如沒有瑪芬模具也可用一次性的錫紙杯子來代替,使用的工具非常簡單。

我們吸入的空氣真的是乾淨的嗎? 我們喝入的水真的是純淨嗎? 全世界有超過八億的兒童正處在鉛暴露的危險環境當中,如果能有個方法能精準及快速的檢測鉛含量,即可以避免重金屬鉛的環境,也減少對身體的損害。血鉛含量是國際衛生組織評估鉛對身體健康影響的指標,水質鉛含量則是預防醫學上評估環境對健康影響的參考依據,但目前檢測血鉛及環境鉛含量主要是依靠醫療及環境檢測單位,除了檢測儀器成本高及耗時外,因為實驗前的樣品前處理需碰觸於高濃度的酸鹼溶液,也會使研究人員有職災的風險。先前實驗室利用基因編碼的方式成功建構出以螢光共振能量轉移技術的鉛離子生物感應器Met-Lead 1.44 M1,發展成熟且穩定,但檢測方法

須依靠昂貴且笨重的儀器,因此以快速及方便檢測鉛離子生物感應器Met-Lead 1.44 M1為目標,打造出可攜式的FRET檢測平台。 鉛離子生物感應器Met-Lead 1.44 M1擁有10 nM (2.0 ppb, 0.2 μg/dL)的偵測極限及相差近5倍的動態範圍。在可攜式FRET檢測平台中,主要利用LED做為亮視野光源、波長為405 nm的二極體雷射作為螢光模式的光源、客製化的細胞樣品架、放大將近50倍影像的複合式光學透鏡、濾光鏡(542/27及483/32)及智慧型手機,並利用3D列印打造出外型構造,透過智慧型手機相機進行影像上的螢光訊號擷取,再利用電腦視窗化程式即可進行影像強

本研究主要目的是設計開發一套體積小方便攜帶,而且可以同時快速地檢測多組樣品,有別於傳統的非同調光激發螢光檢測儀器。本研究方法以高功率LED陣列光源模組為核心,配合斯派羅準則(Sparrow criterion)建立系統輻度均勻度與平均輻度的目標,利用3D CAD軟體SolidWorks建立系統模型匯入TracePro光學模擬軟體,進行系統的輻度均勻度與平均輻度之分析,並以CCD擷取待測面影像,配合Matlab做影像分析實驗,經比較實驗數據與模擬數據之後,發現兩者變化的趨勢相同,系統輻度均勻度與平均輻度可分別達成70%與184W/m^2之目標。
